Avocado - Egg Toast

This avocado – egg toast is sure to satisfy your taste buds when you feel like going a little off from your regular meals. It serves as a great breakfast option which is filling, healthy and the smooth, creamy texture of the avocado takes the game up to another level. Team it with an egg of your preference (boiled, poached, scrambled) and some vegetables to add that extra flavour and crunch and you are set for your meal.



SERVES – 1

COOKING TIME – 15 minutes

INGREDIENTS

Egg – 1

Avocado – half of a medium sized one

Whole grain bread – 1

Cherry tomatoes – 2-3 (or any tomato)

Oil/ghee – ½ tsp

Salt – as per taste

Pepper – ½ tsp

Chilli flakes – as per taste

Onion, bell peppers – sliced and sauteed (optional)


METHOD

1. Take some oil/ghee and prepare a soft scrambled egg with a pinch of salt. You could also use boiled or poached egg if you prefer your egg that way.

2. Take half an avocado. Mash it with a fork and add some salt, black pepper and chilli flakes to it and mix well.

3. Toast the bread in a toaster or a pan.

4. Spread the mashed avocado on the toast. Add in your sliced or diced tomatoes and other vegetables of your choice.

5. Now spread your egg evenly on it and sprinkle with some black pepper and chilli flakes. Serve immediately.
