Healthy Cajun Potatoes

Most of us have relished those crispy fried baby potatoes loaded with the creamy cajun sauce. So, we tried to recreate this yummy appetizer with a little healthier ingredients. This recipe skips the mayonnaise and deep-fried potatoes. It also uses spices readily available, even if you don't have readymade cajun spice in your pantry. Feel free to adjust the flavours according to your liking.

Ingredients:

Baby potatoes - 350-400g

Olive oil - 2tbsp

salt, black pepper - to taste


For the Sauce -

Curd - 200g

chopped garlic - 1tbsp

chilli flakes - 1/4 tsp

dried oregano - 1/4 tsp

paprika/red chilli powder - 1/2 tsp

coriander powder - 1/4 tsp

cumin powder - 1/4 tsp

lemon juice - 1 tsp

sugar - 1 tsp

black pepper - 1/4 tsp

salt - according to taste


Garnishing -

chopped onions

chopped coriander leaves

Method:

1) Boil the baby potatoes till almost done. Drain well and while still warm, smash or flatten the potatoes and season with salt and pepper. Drizzle olive oil and coat the potatoes well.

2) Bake in a pre-heated oven (180 degrees C) for 15-20 minutes or till they turn crispy. Make sure not to burn the potatoes.

If you do not have an oven, these potatoes can made crispy on a non-stick pan as well.

3) For the cajun* sauce, mix in all the ingredients together and whisk well. Taste and adjust the seasonings according to your preference. You could add a teaspoon or 2 of water if the sauce is too thick (which will depend on the curd you use).

*If you have ready cajun spice, you could add it as well.

4) Take the crispy potatoes, drizzle with cajun sauce. Top it with chopped onions (optional) and coriander leaves. Enjoy immediately.
