Lemon Chicken Rice Soup

This is a one dish meal, super easy to prepare and wholesome all together. It is basically a well-balanced all in one meal. It’s great for winter evenings and can be served to the entire family. Feel free to make changes in the seasoning according to your preference. You could also skip the chicken to make it vegan/vegetarian.

INGREDIENTS:

Chicken – 200g boneless or with bone (half a chicken)

Garlic paste – 1 tbsp (for chicken marination)

Onion – 1 medium, chopped

Vegetables – 2 cups (green peas, carrots, cauliflower, mushroom) or any veg of your choice

Rice – ½ cup

Ghee – 1 tbsp

lemon - 1 big

Bay leaf – 1

Whole spices – black pepper, cinnamon stick, cloves

Garlic – 3-4 pods, crushed

Turmeric powder – 1/4th tsp

Dried oregano – 1 tsp

Dried rosemary – 1 tsp

Chilli flakes – ½ tsp

Black pepper – 1 tsp

Salt – to taste

Chicken/veg stock – 2 cups

Water – 2 cups


METHOD:

1) Marinate chicken pieces with garlic paste, salt and pepper for atleast one hour.

2) Take a deep pot dish. Add in ghee, bay leaf and whole spices. Once aromatic, add crushed garlic. Mix and add in onions and cook till soft and translucent.

3) Move the onions to one side of the dish and add in the chicken pieces. Cook well on each side till well done. Cover and cook if needed.

4) Once the chicken is done, remove the pieces and add in all the vegetables. Mix well and cook for about 5 minutes till semi-done.

5) Now add in the rice, salt, pepper, turmeric and all the dry spices (oregano, rosemary, etc.). Mix well and add in your chicken/vegetable stock. Add in more water and give it a good boil. Cook on medium to low flame till rice and vegetables are cooked through.

6) Now add in your pan-roasted chicken. Check the salt and consistency of the soup and make adjustments accordingly.

7) Once fully done, put off the flame and add in chopped coriander leaves/parsley. Add in the juice of one big lemon or according to your liking to get a nice lemony flavor. Serve hot.
